Dough for Focaccia

2 cups warm water

2 tsp dry yeast

4 ½ cups flour

2 tsp salt

in measuring cup add 2 cups water and warm it up

in microwave for a minute or so

then add the yeast and stir

let stand for 10 minutes


in a large bowl add the 4 ½ cups of flour

and the salt and stir

pour in the yeast mixture

knead the dough until it is smooth and elastic



add more flour if too sticky

Knead for about 10 mins and form into a ball


In another big bowl add a bit of olive oil
And add the dough turning to coat.


Cover with plastic wrap and a blanket

And let rise in a warm area for 1 ½ hours
Punch dough after 1 ½ hour and form into a ball again. Cover and let rise for another 45 mins

To a large rectangular baking sheet add a thin coating of olive oil or Pam

Add the dough and with fingertips press out to fit the baking sheet

No need to use a rolling pin

Let rise for 10 mins

Drizzle with olive oil, add olives, basil, oregano and anchovies

You can let it rise for 25 minutes

(I usually don’t)

or for pizza add your favorite toppings

I add pizza sauce, sliced black olives, sliced mushrooms, sautéed onions, cooked bacon,

Red and green sliced peppers, pepperoni

And lots of shredded mozzarella, cheddar or other

Favorite cheeses and toppings

Bake for 25 minutes in 350 oven
