
2lbs lean ground beef
1 cup diced onions
1 cup diced celery
1 cup diced green or red peppers or combination to equal 1 cup
2 tsp minced garlic
1/3 cup corn
1/2 tbsp oregano
1/2 tsp cayenne pepper
2 tbsp cumin
4 tbsp chili powder
Salt and pepper to taste
284 ml or consomme soup or beef broth
540 ml canned tomatoes
156 ml tomato paste
1 tsp oil
1 can 540 ml red kidney beans drained
Saute onions, celery, peppers, and garlic in the oil until tender but not browned.
Remove from the pot.
Add meat to the pot and brown, breaking up the meat as it cooks. Cook thoroughly. Drain fat.
Return vegetables to pot along with other ingredients except the kidney beans and corn.
Bring to a boil then simmer for one 1 hour
Add kidney beans and corn and more seasonings if desired.
Simmer another 15 minutes
Serve with toppings such as sour cream, grated cheddar cheese, green onions.
